Your new go-to weeknight chicken recipe. It’s tried, tested, and true for at least 30 years.
This is my mom’s recipe and it’s so easy to toss together with ingredients I always have on hand. She’s been making it for as long as I can remember and it’s still one of my favourite chicken recipes. It also gets A’s seal of approval.
Recipe
1/3 cup melted butter
1/3 cup honey
2 tbsp Dijon mustard
3 tsp curry powder
Pinch of cayenne pepper
6 boneless skinless chicken thighs
Preheat oven to 350 F. Mix all ingredients together for sauce and pour over chicken in a baking dish. (Or oven safe frying pan – much easier to clean). Bake for 35-40 minutes flipping thighs half way through. (My oven notoriously overcooks things so I do 35, my mom does 40). And that’s it! Seriously so easy
Notes: You can also make the sauce and marinate the chicken up to 24 hours in advance and keep it in the fridge. I don’t find this really changes the flavour but if you have a busy night it saves you a step.
