Salad. But with bread in it. So you get your carbs fix but also get to say you’re eating salad. Win!
I try to share as many of my own variations as I can. But sometimes I find recipes where the original version is exactly what I want and so delicious I still need to share it with you.
This Panzanella recipe is simple and delicious. It’s a weekender because it is better if it sits for 30 minutes before serving and it involves a decent amount of chopping and prep. But it’s worth the effort I promise.
Notes: I used cherry tomatoes and just rubbed the remaining juice out of them after they sat. I used ciabatta bread.
